Banana Protein Pancakes

Intro: 
These protein pancakes pack a hefty protein punch. Per serve, they offer a little over 30g of protein (similar to a small chicken breast!), thanks to the combination of eggs and protein powder. They are perfect for muscle recovery after a sweat session or just a healthier choice for your weekend breakfast!  
Ingredients

1 banana
2 eggs
1 scoop of protein powder (20g protein/serve formula)

Method
  1. Add all ingredients into a blender and blend until smooth. You want the mixture to be a thick and pourable batter consistency. If it feels too runny, add a sprinkle of protein powder; if it feels too stiff, add a splash of water.
  2. Heat a fry-pan over a medium-low heat and lightly grease the pan with butter/coconut oil. 
  3. Pour circles of batter into the pan. Leave to cook for a minute or so each side, flipping with a spatula. 
Serving size: one
Serving suggestion: top with fruit and a dollop of your favourite yoghurt.
