Homemade Satay Chicken Sushi

Sushi is one of my favourite meals, but the thought of making my own sushi used to overwhelm me until I gave it a crack and realized how easy / cost effective it is at home!


Satay Sauce
1/4 cup pineapple juice
200ml coconut milk
1/2 cup peanut butter
1/4 cup sweet chilli sauce
1 tablespoon soy sauce
Zest & juice half a lime
1/2 tablespoon freshly grated ginger
1 stalk of lemon grass minced or cut

Sushi
500g chicken thighs, thinly sliced
1 pack seaweed
3 cups sushi rice
50ml sushi vinegar
Avocado
Capsicum
Cucumber
Ginger, soy sauce and wasabi to serve

For the satay sauce, place the ingredients in a saucepan and gently heat. Whisk until combined and remove from the heat.

Cook the chicken in a pan, once nearly cooked through add satay sauce until fully cooked through.

Cook your 3 cups of rice with 4.5 cups of water until nice and sticky, once cooked add in your sushi vinegar.

To make your sushi cover one piece of seaweed with rice leaving about an inch section free from rice to allow for rolling and securing. Place all your ingredients inside and begin to roll tight - the trick is to not over fill!

Serve the sushi with soy sauce, ginger and wasabi.
